Crushed Lentil Soup

  1. Ingredients:
  • 1/4 c. water
  • 1/2 large onion, chopped
  • 1 green bell pepper, finely chopped
  • 5 cups veg stock (water will work, but better flavor with veg stock)
  • 1 cup red lentils, rinsed
  • 2 teaspoons salt
  • 1 tbsp. cumin
  • 1 tbsp. coriander
  • 1/2 teaspoon ground black pepper
  • 1/3 c. brown basmati rice, uncooked
  • lemon juice from a fresh lemon
  • cilantro

Directions:

  1. Heat water in a saucepan and saute onions and pepper over medium heat for 10 minutes.
  2. Add remaining ingredients, except lemon juice, and bring to boil.
  3. Cover and cook over medium heat for 45 minutes.
  4. Puree; then return to saucepan and reheat.
  5. Stir in lemon juice, sprinkle with cilantro, and serve.
