- Ingredients:
- 1/4 c. water
- 1/2 large onion, chopped
- 1 green bell pepper, finely chopped
- 5 cups veg stock (water will work, but better flavor with veg stock)
- 1 cup red lentils, rinsed
- 2 teaspoons salt
- 1 tbsp. cumin
- 1 tbsp. coriander
- 1/2 teaspoon ground black pepper
- 1/3 c. brown basmati rice, uncooked
- lemon juice from a fresh lemon
- cilantro
Directions:
- Heat water in a saucepan and saute onions and pepper over medium heat for 10 minutes.
- Add remaining ingredients, except lemon juice, and bring to boil.
- Cover and cook over medium heat for 45 minutes.
- Puree; then return to saucepan and reheat.
- Stir in lemon juice, sprinkle with cilantro, and serve.
